Chicken (or pork) with holy basil, or Kai pad kaprao


This dish is undoubtedly one of the most popular in the Kingdom. It can be found in all regions of Thailand. The recipe with pork is probably the most appreciated but Pad Kaprao is also delicious with chicken, shrimps or with mixed seafood. You too can vary the flavours with this easy recipe and it is ready in no time.

Serves 2.


1 tablespoon oil

3 garlic cloves, chopped

3 bird's eye chilli peppers, chopped

250 g minced chicken or pork

75 g snake beans, thinly sliced

1 handful holy basil leaves


Seasoning:

½ tablespoon soy sauce

½ tablespoon fish sauce

1 tablespoon oyster sauce

1 teaspoon dark soy sauce

1 teaspoon coconut sugar


Garnish: crunchy vegetables such as cucumber, salad, etc.


Heat the oil and stir-fry the garlic, chillies, chicken or pork and beans for about 3 minutes. Add the seasoning and cook for another minute. Add the holy basil. Cook an additional minute.


Pour onto a serving plate, garnish with crunchy vegetables and serve with rice.
