Cucumber salad with dry shrimps, mint and peanuts


This salad from Northern Thailand is very refreshing. It's also made in no time and doesn't require specific ingredients. Enjoy it with glutinous rice or rice noodles.

Serves 2.

2 sliced cucumbers, about 300 g

30 g shallot, sliced

20 g unsalted peanuts, dry roasted

20 g dry shrimps

1 fresh bird's eye chilli, sliced

2 coriander sprigs, roughly chopped

A dozen mint leaves, roughly chopped


Seasoning :

½ tablespoon coconut sugar

2 tablespoons fish sauce

2 tablespoons lime juice


Combine all the ingredients in a bowl. Mix well. Taste to adjust the seasoning.


Serve with glutinous rice or rice noodles.


Variation: replace peanuts with cashew nuts.
