Fried rice with holy basil or Pad Kaprao


Vegan fried rice with tofu and holy basil

Pad Kaprao is one of the most popular dishes in the Kingdom. It can be found in all regions of Thailand, where it is always eaten with rice. In this recipe, the rice is stir-fried and not served separately. It is an extremely tasty dish that requires relatively few ingredients. We highly recommend it!

Serves 2.


75 g tofu, cut into small cubes

2 garlic cloves, chopped

2 bird's eye chillies, sliced

75 g snake beans, sliced

400 g cooked rice, unsalted, cooled for at least 1 hour

2 tablespoons mushroom sauce

2 tablespoons light soy sauce

1 teaspoon coconut sugar

1 handful holy basil leaves

2 tablespoons oil


Heat the oil and stir-fry the tofu, garlic, chillies and beans for about 3 minutes. Add half of the soy sauce and mushroom sauce and the sugar. Stir briskly.


Add the rice, the rest of the seasoning and the holy basil. Cook for another 2 minutes or until rice is hot. Taste to adjust seasoning.


Transfer to a serving dish. Serve with fresh vegetables such as lettuce and cucumber.
