Thai sweet chilli sauce: an easy recipe to serve with fried chicken and spring rolls

Thai sweet chilli sauce

Discover our authentic Thai sweet chilli sauce recipe, perfect with fried chicken, spring rolls and much more! This sweet and spicy sauce adds a touch of Thai flavour to your favourite dishes. It's easy to prepare, requires just a few ingredients and can be kept for up to a week in the fridge. 

Serves two.


200 ml water

20 g garlic, chopped

15 g fresh cayenne pepper, chopped


Seasoning :

2 tbsp coconut sugar

3 tablespoons rice vinegar

1 teaspoon salt


Blend the water with the garlic and chilli. Bring the mixture to the boil, add the seasoning and cook for around 15 minutes over a low heat or until it reaches a syrupy consistency. Taste to adjust the seasoning. Serve warm or at room temperature.


Variation: some people chop the garlic and chilli instead of blending with the water.
